This spammer has try to book in at our hotel

THE NAMES AND PASSPORT DETAILS OF THE DELEGATES FOR THE BOOKING;
A cheque payment will be forwarded to you to offset your bills and any
other necessary expenses that may arise will be included in the cheque

on how the remaining money will be spend.

This is an overpayment scam. The scammer will have someone send a fake check and tell you to use part of it to reserve the rooms and send the rest to someone else, who will forward it to the scammer. When the bank figures out that the check is fake, which may be several weeks after it apparently clears, you will have lost the money.
